I know I promised you a month of cookies. And I promise, it’s coming. But I couldn’t resist giving you one last cupcake recipe. We celebrated St. Nicholas’ Day with my family yesterday, so I decided to whip up something festive to share. Candy Cane Cupcakes. They are super delicious. Moist, chocolaty, with just a hint of mint. Yum!
I decorated them two different ways. Just in case you want to replicate them for your family, I’m even including a mini tutorial.
I use a Wilton 1M star tip to make both cupcakes. The first is very simple. Fill your piping bag about half way with buttercream. Place the tip in the middle of the cupcake and squeeze out the buttercream. Make sure to lift the tip as it comes out. Then, sprinkle with red sprinkles. To add the red rim, pipe on the buttercream the same way as before. Then, using a regular butter knife, spread buttercream around the top. Go around the edge of the cupcake, keeping your knife at an angle to create a beveled edge. Smooth over the top to make sure that it’s flat. Then, roll the edge into the sprinkles, and top with mini candy canes. I had a lot of fun making fun shapes to put on top. The kids will too!

Ingredients
- 1/2 cup vegetable oil
- 1 cup sugar
- 1 cup brown sugar
- 3/4 cup sour cream
- 1 tsp pure vanilla extract
- 1 tsp mint extract
- 2 eggs
- 1 3/4 cup flour
- 3/4 cup cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup boiling water
- 1 cup butter, softened
- 1/2 lb powdered sugar
- 1 tsp pure vanilla extract
- 1 tsp mint extract
- splash of milk
- Mini candy canes for garnish
Instructions
- Preheat oven to 350. Line muffin pan with liners.
- In the bowl of your mixer, combine oil, sugars, sour cream, and extracts until creamy.
- Add eggs one at a time, mixing well after each.
- Mix on high for two minutes.
- In a medium bowl, sift together dry ingredients twice.
- Add to mixer in three parts, wiping down sides of bowl as necessary.
- Add boiling water. Batter will be very thin.
- Fill liners 3/4 full. Bake for 15-20 minutes. {Mine took about 17 minutes.}
- Cream butter in mixer until creamy.
- Add powdered sugar one cup at a time.
- Add extracts. Beat on high for two to three minutes.
- Add milk until you reach your desired consistency.
- Pipe onto cooled cupcakes.
Notes
For added minty goodness, add mint baking chips or candy cane pieces to the cupcakes!
