Hello bloggy friends! I know I took a break from blogging for the holidays, but I missed you all so much! It has been a relaxing Christmas break and I am ready for some more hustle and bustle again. But not today. Today, I want just one more day to relax.

Today is one of those dreary, cold, sweatpants, didn’t do my hair, miserable day days. You know the kind. I didn’t even get any of my promised snow :-( Right now, I need some comfort. So I made soup. I love soup. Almost as much as I love cupcakes. It’s so warm and delicious and it tastes like comfort. Mmmm. The best part about this soup? It doesn’t take any extra ingredients. I used whatever I had in the house! Spicy sausage, spinach, carrots, and shells. I really love shell pasta. I think it has something to do with my mac and cheese as a kid. Warm and cheesy, mmmmm. I’m getting ahead of myself.

Yup. That one. So delicious and nutritious! {OK I may have made that up. But I still think it’s true.} And if your family is as anti-vegetable as boyfriend, don’t worry! It goes great with sour cream. :-) {And Parmesan cheese. Seriously go try it.} This is the perfect soup for a gross, disgusting day like today. Try it the next time you need a little comfort.

{Spicy} Sausage and Shell Soup

{Spicy} Sausage and Shell Soup

Ingredients

  • 1 lb. sausage
  • 1 medium onion, chopped
  • 2-3 cloves of garlic {or 5 if you're me}, minced
  • 2 tbsp. olive oil
  • 1/4 tsp cumin
  • 1/4 tsp chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 2 cups chopped bell peppers
  • 1/2 cup chopped carrots
  • 10 oz. cut spinach
  • 32 oz. chicken broth
  • 2 cups water
  • 1 beef bullion cube
  • 2-3 cups shell pasta
  • salt and pepper to taste

Instructions

  1. Cut sausage into bite size pieces.
  2. In a large pot, brown sausage and drain.
  3. Add onions and garlic to sausage and cook until browned.
  4. Add vegetables, broth, water, buillion, and spices and bring to a boil.
  5. Let simmer for 30-45 minutes.
  6. Add shells and cook for 8 minutes or until pasta is fully cooked.

Notes

Feel free to use any vegetables you have available.

If you do not like it spicy, use sweet sausage and omit the chili powder.
